Don’t you think that the fancy kind of scrambled eggs meal with onions, tomatoes and coriander is just a stir fry?
Well, here’s an egg-free tofu scramble stir fry! 😝
🌹Secret ingredients: firm tofu and turmeric
🌹Better with: black salt (kala namak)
…but i don’t have black salt so black pepper would have to do!
I also added steamed (or boiled) broccoli and slices of avocado (bcs it’s been in the fridge for too long lol)
Here’s what i did:
1️⃣ cut 𝐛𝐫𝐨𝐜𝐜𝐨𝐥𝐢 and place it in a pot and add a tiny bit of water. close the lid and let it soften.
2️⃣ smash/cut 3 cloves of 𝐠𝐚𝐫𝐥𝐢𝐜 and slice 2 𝐫𝐞𝐝 𝐨𝐧𝐢𝐨𝐧𝐬 (warning: tears) and cook them in a hot pan with a little bit of oil.
3️⃣ tear some 𝐨𝐲𝐬𝐭𝐞𝐫 𝐦𝐮𝐬𝐡𝐫𝐨𝐨𝐦 into the pan and stir.
4️⃣ add seasonings of choice; i added 𝐩𝐚𝐩𝐫𝐢𝐤𝐚 and 𝐛𝐥𝐚𝐜𝐤 𝐩𝐞𝐩𝐩𝐞𝐫.
5️⃣ crush two blocks of 𝐟𝐢𝐫𝐦 𝐭𝐨𝐟𝐮 and sprinkle some 𝐭𝐮𝐫𝐦𝐞𝐫𝐢𝐜. mix mix mix.
6️⃣ add your 𝐥𝐞𝐚𝐟𝐲 𝐯𝐞𝐠 of choice (i don’t know the name of the veg i bought lolol) and stir.
7️⃣ transfer the tofu scramble mix onto a plate.
8️⃣ cook the can of 𝐛𝐚𝐤𝐞𝐝 𝐛𝐞𝐚𝐧𝐬 on the pan along with the above-mentioned seasonings.
9️⃣ when all is done transfer onto your plate (don’t forget the brocco) and garnish with whatever you wish (i added slices of avo).
The great thing about this dish is you can have it at any time of the day or night. It’s super filling and contains most of the nutrients your body needs!
